Our Roots

In the heart of Vancouver, a contemporary homage to traditional Vietnamese desserts was born. We bridge the gap between nostalgic street flavors and refined culinary artistry, treating colorful ingredients like high-end art against a minimalist canvas. It began with a simple memory: the clinking of ice against glass, the vibrant hues of pandan and mung bean, and the sweet aroma of coconut milk drifting through humid afternoon air.

Our founder, tracing the handwritten recipes of her grandmother, sought to preserve these fleeting moments. The vision was never to reinvent the wheel, but to elevate the presentation — to give chè the editorial stage it deserves. Every bowl is constructed with intention, balancing textures from the chewy tapioca pearls to the delicate crunch of water chestnuts.

The journey from those bustling markets to our serene cafe was paved with trials. We spent months sourcing the perfect ingredients — finding local farmers who could cultivate the exact varietal of taro needed for our signature ube paste, and importing the finest lotus seeds directly from Vietnam. It was a labor of love, driven by a desire for authenticity wrapped in modern elegance.

We view our cafe not just as a place to eat, but as a gallery of flavor. The stark cream walls and minimalist decor are intentional; they serve as a blank canvas, allowing the vivid, jewel-like colors of the desserts to command attention. It's a visual contrast that reflects our culinary philosophy: rooted in tradition, presented with contemporary flair.

Today, Chè stands as a testament to heritage. We are a gathering place for the diaspora seeking a taste of home, and for curious locals eager to experience the depth of Vietnamese sweets. Our menu is an evolving archive, documenting classic recipes while occasionally introducing thoughtful, seasonal interpretations.

As we look to the future, our commitment remains unchanged: to serve memories in a bowl, meticulously crafted and beautifully presented. We invite you to sit, savor, and share in the story of our motherland.
